Berry Cobbler

My mom made Blackberry Cobbler yesterday with the berries from her garden. I have been eating this cobbler for as long as I can remember. It came from a cookbook that was put together by neighbors in our neighborhood in Houston. I have made this vegan before with margarine and soymilk and it was just as delicious. This cobbler has a cake like consistency and is a real crowd pleaser. Enjoy!

Easy Fruit Cobbler (modified from Garden Villas Cookbook)

1 stick of butter melted in the oven in a 9x12 dish.
4 cups of berries or other fruit - if very tart add a small amount of sugar
Cook berries on the stove until they release their juices and are heated through
Add berries to dish after butter is melted
Mix together in a bowl:
2 cups flour
2 cups of sugar
2 teaspoons baking powder
1/2 teaspoons salt
1 teaspoon of vanilla
Add 2 cups milk to dry ingredients

Mix batter well and pour over fruit.
Bake 40-45 minutes at 350. Serve with vanilla ice cream.
